Dried Beans - {Loubia} Recipe - Cooking Index
1 lb | 454g / 16oz | Marrow beans |
2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Chopped onions |
1 | Crushed garlic clove - (optional) | |
1/4 cup | 59ml | Tomato sauce |
2 tablespoons | 30ml | Tomato paste |
1 teaspoon | 5ml | Cumin seed |
1 | Cayenne pepper | |
2 tablespoons | 30ml | Chopped parsley |
Cook beans according to directions on package. Drain. In large saucepan, heat the oil. Add onions and optional garlic (if using) and cook until slightly browned. Add tomato sauce, tomato paste, cumin, pepper, and beans. Mix gently. Cover and simmer for 10 minutes. Correct seasoning. Sprinkle with parsley. Serve hot.
